Our Easter Flavors
Guess what we're doing right now?
Baking!
Yup, baking. We made delicious vanilla buttermilk cupcakes that we used for Rockin' Raspberry for our base. They're going to be split up into two different flavors:
Key Lime Pie
Peeps Marshmallow Supreme
And if I'm right (aren't I always?) we're also going to have Chocolate Espresso Surprise using our leftover chocolate ones baked by me and me alone! Anyone coming to our house for Easter is in luck :)

Cupcake Idol: Who Will Win?
And Bake We Did...
Do these look yummy or what? But one little detail... I made them. Me. Kyra. Without Mom.
Mom was stressed over taxes, so I wanted to make some chocolate cupcakes for her. I used the recipe we already had- the one we've used twice before. The hardest parts were the sifting (we NEED a better sifter) and waiting for the eggs to become room temp. (By the way, my dad was warming them up for me by holding them. Then he put them in his pockets so he could use his hands. Then he bent over. One egg cracked. His pants are now in the wash.) They turned out GREAT!

Later, we both made some frosting for the cupcakes. This is caramel for the sea salt caramel buttercream.
Isn't it beautiful? Ha ha. This cupcake was frosted by me- I admit it. There wasn't enough frosting left in the bag, so it came out funny. The caramel drizzle just didn't work out.
A chocolate sea salt caramel Peeps cupcake. Frosting with our new grass tip! I just had a vision, okay? I couldn't wait until the actual Peeps ones. The Peeps ones will look a bit different cuz the decor will be a bit different and they won't be chocolate :(
We had leftover strawberry buttercream from these cupcakes, so we tried our hands at a chocolate-covered strawberry cupcake, complete with a ganache-dipped berry.

What do you get when you cross cupcakes with lollipops?
And with a little more experimenting, you get this. Yes, my friends... these are cake pops.
These particular cake pops are from the coffee store chain, Starbucks. The flavors are Tiramisu, Birthday Cake, and Rocky Road. Last night, K+K+J+J had the pleasure of trying the Tiramisu cake pops. We were satisfied, but not taken over the top with amazing flavor. Just satisfied.
Anyhow, we think the idea is cute, but we might stick to cupcakes. However, if you want to try your hand at cake pops, check out bakerella.com for some recipes and some of the cutest decorating ideas in this universe... for cupcakes, too!

I love shopping trips. With the combination of Michael's and JoAnn's, we were able to get this sweet stuff. Yup. Tons of liners, adorable cupcake boxes, Peeps (Easter's here), and a decorating tip you can use to make frosting that looks like grass. I am in love.
Hard to see (stupid, stupid camera. We'll get a new one soon, promise.), but it's polka dot liners, black+white vine liners, Peeps, and our new decorating tip.
Don't you just love the cupcake boxes? And the pink liners? And the Easter liners? And the polka dot liners? And the decorating tip? And the Peeps? And that, my friends, is why we here at Double K are itching to bake some more cupcakes.

A Taste Of Summer
And they taste even better than they look. Jordan calls them "refreshing and moist." Recipe is right here. We made some slight changes, like only half the juice in the frosting and more juice in the cake. They were awesometasticallyumdiddlyumptiousfully delicious. Now all we need is some warm weather to go with them.

Fondant: A Living Nightmare
Maybe it's exaggerating, maybe it was because it was our first time with fondant, but now we know WHY they make pre-tinted. It's impossible to get a dark red without taking hours to do so. Stick to light colors or buy the already colored stuff!
